NATURAL SYRUP ENRICHED WITH BETA-CAROTENE

Abstract. The present article presents one of the possibilities to utilization a microbian bioproduct of type precursor to vitamin A in the alimentary industry. The microbian bioproduct has a high level of beta-carotene and has been obtained from the biomass resulted from the cultivation in optimum conditions of a yeast stern. The stern used is a Rhodotorula and has been selected from a natural medium. We studied the possibility to enrich with beta-carotene some natural syrup, produced by PLAFAR Brasov, by addition in the initial recipe of the microbian product. The bioproduct has been used in several recipes, in different concentrations and under several forms of presentation. We analyzed the following: the bioproduct degree of integration in the syrup, the physico-chemical and microbiological parameters of the syrup, the stability in time.
